KOZL and the Ozark Empire Fairgrounds in Springfield put on the first annual Ozarks Bacon Festival.

The Ozarks Bacon Fest a Tribute to Bacon, Bourbon & Beer had a winning bacon cupcakes recipe. And the Cook-off categories were Best Bacon appetizer, Main Dish and Dessert.

The Fest Tickets gave guests access to a bacon-infused wonderland. Ozarks’ best chefs made amazing creative bacon snacks. The national brands, artisan bacon makers and bacon purveyors were on display. And you could sample and buy the new bacon products.

Mixologists and brewers were handing out bacon-inspired cocktails, beer and wine. And in honoring bacon in all its glory the Fest had contests. A Bacon Eating Contest. A Best Bacon Recipe. And a Bacon Art contest.

The $30 admission ticket allowed patrons samples of bacon and bacon-infused foods. Also local and regional beers, wines and spirits.

For the real bacon lover there was a $45 VIP Pass. This allowed entry into the event one hour before the doors opened. Gifts included a Fest t-shirt and gift bag with assorted bacon-inspired goodies.

Maple Bacon Cupcakes Recipe.

•    3 ¼ cups all-purpose flour.
•    2 ½ teaspoons baking powder.
•    1 ¼ teaspoon baking soda.
•    ¾ teaspoon salt.
•    1 teaspoon ground ginger.
•    1-¼ stick unsalted butter softened.
•    ½ cups light-brown sugar.
•    3 large eggs.
•    2 ½ cups maple syrup. 
•    2 teaspoons vanilla extract.
•    ¾ cup buttermilk.
•    ½ cup candied bacon.
•    ½ cup walnuts or pecans finely chopped (optional).

• Place maple syrup in a sauce pan. Reduce by ½ over medium high heat. Let cool before adding to the batter.

• Heat oven to 350 degrees F. Sift together flour, baking powder, baking soda, salt and ginger.  And set aside.

• Beat the butter and sugar together. Using a mixer set it on medium speed in a large bowl until fluffy. Beat in the eggs, syrup and vanilla. Stir in flour mixture by thirds. Alternating with the buttermilk. Stir in nuts.

• Fill 18 lined muffin cups. Bake until a tester comes out clean. About 20 minutes. Cool completely.

Maple-Butter Frosting for the Bacon Cupcakes.

The Ingredients.
•    1 cup unsalted butter softened
•    3 ounces cream cheese, softened
•    2/3 cup dark-brown sugar
•    ¼ teaspoon salt
•    1 tablespoon Jack Daniels Honey whiskey
•    ¾ cup maple syrup
•    ¾  teaspoon vanilla extract
•    1 cup confectioners’ sugar

The Frosting Directions.
• Beat the butter, cream cheese, brown sugar, and salt in a medium bowl. Set the mixer on medium speed until light and fluffy. About 3 minutes.

• Continue beating. Add the Jack Daniels, maple syrup and vanilla. Gradually add the confectioners’ sugar. Increase the speed to high. Beat until light and fluffy, about 1 minute.

• Chill for 1 hour before using.

Candied Bacon.
•   1 lb bacon
•   1-¼ cup brown sugar
•   Seasoning
•   Place bacon on a cookie cooling rack on a baking pan. Coat with sugar and desired seasoning.  
•   Bake in 400F oven until desired crispness.
