Vermont’s biggest harbinger of spring is the maple sugar season. It kicks off in March and continues through April with fairs, festivals and fun. As the largest producer of maple syrup in the U.S., Vermont sure knows how to celebrate the sweet stuff.

Weather permitting you can see first-hand how maple sap is collected and boiled down to make syrup. Some sugar makers offer horse-drawn wagon tours of their sugar bush. Others offer maple donuts, pancakes and syrup, candies or taffy-like “sugar on snow.”

No two sugar houses are the same. There are approximately 2,000 maple syrup producers in the state. The Vermont maple syrup is 100% natural and contains antioxidants, calcium and other beneficial minerals.

Depending on the festival, you may find a scavenger hunt, carnival, sleigh ride or sugaring demonstration. Many will feature special treats such as maple cotton candy or maple kettle corn. Or sugar-on-snow that is served the traditional way with pickles and doughnuts.

Vermont maple season recipes vary from appetizers, main dishes to desserts. Here is one that looks delicious for a shower, bachelor party or reception.

Maple and Wine Poached Pears.

Vermont Maple and Wine Poached Pears.
Yields 4 servings.
• 2-1/2 cups pinot noir or other light.
• fruity red wine.
3/4 cup pure Vermont maple syrup, preferably Grade B.
1/2 cup sugar.
1 cinnamon stick.
2 star anise pods.
4 firm pears such as Bosc or Bartlett, peeled and cored.

Place wine, maple syrup, and sugar in a large pot with the cinnamon stick and star anise pods. Bring to a boil, then reduce to a simmer. Add the pears and cover, cooking for about 6 minutes. If pears were not submerged, turn the pears and continue cooking, covered, for 6-10 minutes. Cook until pears are easily pierced with a fork.

Remove the pears with a slotted spoon, and cook the liquid until it is reduced by half. Serve your pears with iced cream or whipped cream. And spooning the reduced liquid over the pears. Enjoy!

The granddaddy of the maple showings is the Vermont Maple Festival in St. Albans. The event features antiques, crafts, tastings, contests and more.

Here are more maple fests that can be found throughout the state during the spring.

Sugaring Time Festival Sugarbush Resort. A delicious variety of maple-themed activities, including a resort-wide scavenger hunt.

Maple Festival Middletown Springs. Watch a demonstration of early maple sugarmaking in a cast iron kettle over an open fire.

Cabot Maple Festival. Activities are a pancake breakfast, silent auction and crafts. As well as Lego fest, films, skating and snowshoeing.

Lunenburg Maple Festival. Pancake breakfast, photo displays and antique sugaring equipment. Maple recipe samples, maple pie baking and maple quilt contests.

Maple Fest Celebration, Poultney. Horse-drawn carriage rides, raffle and open sugar houses.

Open House Weekend statewide. You can watch as maple syrup is being made. And the activities vary by each sugar house unique character.

Maple Madness, Woodstock. Scavenger hunt, pancake breakfast, tree tapping, tastings and a Maple Adventure bike ride.

Whitingham Maple Festival. Sugarmakers open their doors to visitors to see the sap-to-syrup process.

World Maple Festival, St. Johnsbury. Pancake breakfast, 5K run, street festival, crafts and food vendors.
